Apple Recipes | Incredapple Salad

As autumn approaches, the air will be filled with the sweet smell of apples, and at Apple Rubber, we are no strangers to the qualities of this delicious fruit.

Apples contain several important nutrients and are low in calories (only 80-90 per apple).  They provide fiber and pectin, which aid in digestion and rid the body of toxins. Apples are also high in potassium and low in sodium, and studies indicate that eating one to three apples a day significantly reduces the incidence of colds, headaches, and other tension problems.  Best of all, apples leave our breath fresh and teeth clean.

Over the next few weeks, we will feature some great recipes for this healthy treat.  Since the farmer’s markets are filled with fresh produce of all kinds at this time of year, we’ll start with a fresh vegetable recipe and an apple twist!

Salad

1 quart of salad greens

1 medium Golden Delicious apple, cored and chopped

1 cup of cheddar cheese cubes

½ cup chopped celery

½ cup golden raisins


Curry Dressing

2/3 cup of vegetable oil

1/3 cup wine vinegar

3 tablespoons frozen concentrated apple juice, thawed and undiluted

1 tablespoon of sugar

½ teaspoon celery salt

½ teaspoon curry powder

Measure all curry dressing ingredients into a shaker jar and mix well.   Place all salad ingredients in a bowl.  Add curry dressing to taste, toss lightly, and enjoy!
